more summer eating

When it is warm I just don’t really want to be spending that long in the kitchen.  These are some quick meals I made this week.

1. tomato bruschetta: ripe chopped tomatoes with the classic triumvirate of salt, olive oil and basil. Put on toast that has been rubbed with garlic

2. lazy macaroni cheese: pasta, peas, sun dried tomatoes and tomato sauce with mascarpone stirred in (or if super lazy the tomato mascarpone sauce from M&S)

We also went for a picnic and had olives, bread with tapenade and goats cheese and a broccoli, pea and goats cheese salad.

What have you been eating?  I’d love some more quick and simple ideas.

  1. Quesadillas! I made a lovely recipe from the Wahaca book that was in Emerald Street a couple days ago – broad bean, pea and mint. Really delicious.

    We also had bruschettas and Asian roast chicken with a yummy slaw I made with my new food processor!
